Squash Up and Carry On
Pumpkins and winter squash are the harbingers of autumn. They photograph beautifully and decorate holiday tables. We mound them in bowls and let our children and grandchildren wander through the corn patches and later, choose a wonderful, shapely, orange globe with the perfect stem and curling vine tendril. Now what?
Which are edible and which are decorative? What do I do once I impulse buy four acorn squash, three pumpkins, two butternuts, and a gorgeous delicata? Which are edible and how do I process them? Let’s learn four ways to enjoy these global treats!
